PUREED BUTTERNUT SQUASH SOUP...





Ok everyone, here's a recipe straight from my kitchen and its super easy and super yummy!
During the fall I always have a batch of this in my fridge...its the perfect heat-and-serve dish.




Ingredients:


3lb butternut squash cubed
2T extra virgin olive oil
1 1/2C chicken broth
2T fresh chopped ginger
2T fresh minced garlic
1/2C chopped sweet onion
1t dried sage
1t allspice
1t cinnamon (or 1 cinnamon stick)
1/2C plain greek yogurt
salt&pepper to taste




In a heavy pot sautee garlic, ginger, and onion over medium heat (about 1 min)
Add butternut squash and cook till tender
Pour in chicken broth and turn heat down to simmer
Add allspice, cinnamon, and sage and simmer 20 min
Remove from heat
Puree in food processor in batches with 1C greek yogurt and S&P to taste
Dish out and top with 1T greek yogurt and cinnamon
