These muffins warmed up with (spray) butter have got to be one of the best parts of waking up. With the butter & sugar substitutions + the whole wheat flour, these are a pretty guiltless treat.







1C all-purpose flour
1/2C whole-wheat flout
1t salt
1 1/2t baking soda
1t instant espresso powder


4 very ripe bananas
1/2C I Cant Believe its Not Butter Light (melted)
1/4C Splenda
1/4C granulated sugar
1/4C splenda (or standard) brown sugar
1/4C milk
1 egg


1C dark chocolate chips


*Preheat oven to 350 degrees F. Spray 12-cup muffin pan with pray or line with muffin cups
*In medium bowl mix bananas, sugars, milk, and egg. 
*In another medium bowl mix all dry ingredients. 
*For a well in dry ingredients and pour the wet ingredients into the well and stir until just combined. Fold in the chocolate chips.  
*Fill each cup 3/4 full and bake on center rack in oven for 20-25 minutes. 
*Remove to cooling rack and let cool 15 minutes. 


*Muffins can be stored in airtight container for up to 2 days.....  ENJOY!
